My favorite sandwich to make at home. It has a wonderful combination of flavors and will impress anyone despite being easy to throw together with little to no cooking involved.
Ingredients
- 3-4 slices proscuitto, enough to fill the sandwich
- 2 thick slices of mozzarella
- 1 handful of arugula
- 2 tsp of fig jam
- 2-3 slices of roasted red pepper (store bought / jarred is fine)
- 2 tsp mayo
- Extra virgin olive oil
- Balsamic vinegar glaze
- Freshly ground black pepper, to taste
- 1 high-quality Italian sub/hoagie roll
Directions
- Heat up a pan on medium heat and add olive oil.
- Once hot, arrange the slices of proscuitto so they can be placed right onto the bread after. Add the mozzarella on top and heat until it starts to melt a little bit.
- Add a few roasted red peppers to the same pan to heat up and give them a bit of a sear too.
- While everything is heating up, drizzle olive oil on each slice of bread and toast it.
- Assemble everything - spread fig jam on one slice of bread and mayo on the other, add the proscuitto, mozzarella, roasted red pepper, and arugula, and drizzle some balsamic glaze on top. Add black pepper to taste, close the sandwich, and enjoy!
