Quick and easy weeknight dinner, mild enough to eat with gastric issues.
Ingredients
For the chicken
- 4 chicken breasts, split and pounded to 1/2-inch thickness
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1 1/2 teaspoons turmeric powder
- 1 pinch salt
For the brine
- Water (enough to cover chicken breasts)
- 1/4 cup Kosher salt for every 4 cups water
- Optional aromatics, such as fresh ginger, star anise, black peppercorns, or lemongrass
Directions
- Prepare the brine, and let the chicken breasts sit in it for 15 to 30 minutes.
- Add the honey, soy sauce, turmeric powder, and salt to the chicken, stir to combine well.
- Preheat the oven to 400 degrees F and bake chicken for 20 minutes, until internal temperature reaches 165 degrees F. Serve hot, ideally over white rice with steamed vegetables.
